All of our beers are brewed one barrel at a time (they’re even mashed in a barrel!), lending a distinct vintage quality to each batch. It also allows us to stretch our wings creatively, completely free of a production schedule.
All of our beers are produced using a variety of yeasts and bacteria. Our inspiration comes from the farmhouse brewing traditions of Europe, and brewers of funky, weird beers around the world.
Every one of our beers starts and finishes in oak barrels that previously held wine or various spirits. The oak and its previous inhabitant become a part of the flavour profile, and our mixed culture takes residency in the nooks and crannies.
